When eventualy we do start to get a glut of things I never know what to do with all the cucumbers I grow. Found a great recipe yesterday for braised cucumbers. I have never tried cooked cucumbers before except cucumber soup - but this sounds good.
Peel cucumber and cut into quarters and remove seeds. Cut into 1" pieces. Melt butter in a pan and add cucumber. Cover and cook for about 5 mins on a medium heat. Stir in salt, lemon juice and chopped mint. Cover and cook for another couple of minutes.
I will definitely be giving this a go. What do you think?
Comment by Caro on May 8, 2012 at 20:03 Sounds very good but I'm trying to think what I'd eat it with. Is it a sort of dip? Reminds me a bit of tzatziki (or however you spell it!).
