Cook Time bake for 20-25 mins
Ingredients 250g unsalted butter cut into cubes 250g dark chocolate[about 70% cocoa solids] broken into solid pieces. 3 medium eggs 250g caster sugar a pinch of salt 150g self raising flour 250g beetroot boiled ‘till tender peeled and grated..
DIRECTIONS
Grease a shallow baking tin, approximately 20 x 25 cm ,and line the base with baking parchment .Put the butter and chocolate in a heat proof bowl. Set oven at 180c/gas Mark 4 put bowl in oven until butter and chocolate start to melt. Stir and replace in oven to melt completely. Whisk eggs and sugar together in a large bowl ,then beat in the chocolate and butter until smooth. Combine salt with flour, sift over the chocolate mixture .then gently fold in with a large metal spoon. Fold in the grated beetroot do not over mix or brownies will be tough.. pour mixture into prepared tin and bake for 20-25 minutes ,Test with a knife or skewer inserted into the centre should come out with a few moist crumbs clinging to it ..Do not over cook or they will be dry
