I have been making Leek and potato soup now for months...and there are still some Leeks left to use. Leeks are the best ! Use them if you have no onions left over too. They over-winter so well, frost is no bother to them! I also had some over-winter cabbages and now slicing the leaves and gently sautee them into any meal. Lettuce is used in all sandwiches and a good crunch to remind one of what is yet to come!
