I keep reading about gardeners leaving any older and bigger bean pods on the plant to grow. I grew Cosse Violette purple french beans this year; quite a few got too large and I've just left them and am wondering what to do with them next and am open to suggestions!
For example, if I want them for seed, do I leave the pods on the plant or harvest and dry? If I want to pod the beans and save just the beans for later use, say in a casserole, how does that work? !
The bean pods are currently about 12" long and slightly damp feeling. I'm inclined to leave them until I'm more certain about what to do with them.
Any advice very welcome - I'm sure there are many experienced gardeners out there who will be able to help. Thanks!

Once they are dry store in an airtight container. If using to eat, soak them overnight before use. You could store the whole plant with the beans on and hang them somewhere to dry out more naturally.
