UK Veg Gardeners

I see one or two Veg Gardeners, like me, are awaiting the inevitable courgette avalanche. It starts with one courgette being enjoyed, cooked into pasta or ratatouille, shortly followed by panic induced pleas for recipes and ideas.  So, getting ahead (for once!), how do you cook/store yours? Recipes please!

I freeze them after being cut into chunks, one kilo at a time, for courgette and lemon soup.
Grated into omelettes with variations of cheese and chilli or ribboned and stirfried with anything else to hand plus garlic and soysauce.
Oooh, I like the sound of Courgette and Lemon Soup.  Any chance of the recipe Elaine? And what do you do the courgettes before freezing? Just wondering as they're very watery...

Courgette Soup

 

Ingredients

1 tsp olive oil, 1 clove garlic, crushed, 750g courgettes, 1 litre chicken stock, 1 tbsp chopped fresh thyme, 6 slices prosciutto (I don't bother with this), 55g parmesan, shaved, juice of 2 lemons (I only use one as 2 makes it too lemony) salt and black pepper.

 

  1. Heat the olive oil in a large pan, add the garlic and sweat for a minute.  Add courgettes and sweat for a further 8-10 mins.
  2. Add chicken stock and thyme, bring to the boil and simmer for 5 mins. or until courgettes are just soft.  Season to taste.
  3. Liquidise the soup in batches and return to the rinsed-out pan.
  4. Grill prosciutto and chop in small pieces
  5. Reheat the soup and stir in the lemon juice.  Serve with prosciutto and parmesan sprinkled on top.

no but I've tried courgette cake perhaps it's similar

Mangocheeks, sounds like you've really explored the whole courgette glut experience!  I'm heading over to your blog to check out your recipes.  I haven't tried chocolate and courgette cake but I like the sound of courgette pakoras.  

 

Debi, have you tried courgette bread? I think courgette rolls would be nice ... 

Tried a slice from someone else and it was rather nice, was gonna try some this year, when the glut finally arrives!!!
Have you got the recipe Debi? I'm sure there's loads out there on the internet, but tried and tested works best for me!

Sadly I haven't grown any courgettes today, but I did find some local ones at the weekend and created some waffles - thats Courgette and Chocolate Waffles. Please come on over.

Thanks Shaheen.  Your recipes are a very useful resource, will be bookmarking this!  Not sure about courgette and chocolate waffles - I'm a traditionalist on the waffle front and prefer mine plain with maple syrup!
