My favourite has to be chilli jam. We always have some in the fridge and use it drizzled over stir-fries or smeared on a salmon fillet before baking. Sometimes we mix it with mayonnaise to make a dip. Yum.

Wow, that's a complicated chilli jam - why the tomatoes for a start?

 

Try this...

 

350g peppers
75g chillies
25g fresh root ginger (peeled)
175ml cider vinegar
600g jam sugar (with added pectin)
25ml lime juice
half tsp salt

Slice and de-seed the peppers and chillies. Finely chop these with root ginger. Place in a large pan, add the vinegar and slowly bring to simmer. Add sugar, lime juice and salt, stir till sugar dissolved and bring to boil

Boil for 4 - 6 minutes, remove from heat, allow to cool and then pot.

Chilli Vodka

 

Every year we make all of these and give them to friends for Christmas gifts - and sell the surplus at the Farmers Market.

 

Was particularly chuffed when I heard a 200 ml bottle of my Chilli Vodka had been sold in 'shots' at a charity event and raised over £80 - that's 40p a ml - or £1800 a gallon !

That's the first recipe I tried and I quite like it. I might try yours if I happen to spot some bargain peppers as I don't grow them. Alys Fowler has got a recipe for chilli vodka but I haven't tried it yet. Sounds interesting.

I found a jar of marinated garlic cloves at the back of the fridge, I had forgotten all about them. I tried making a couple of different flavours, but I think chilli and honey is the best one. Perfect for munching with olives and a glass of wine, and another good one for Christmas presents/hampers.
