I don't know what it's like in other parts of the country but round here the elder flowers are starting to bloom. That means it's time to make that most refreshing of summer drinks, elderflower champagne. If you haven't tried it before I'd certainly recommend making a few gallons...it's so simple but remember to gather the flowers soon after they come out otherwise they start to smell like cat pee.

Oh i always use cultivated yeast, find it more reliable!
